    Hi all users of DigitalPoint.

    I'm an Australian chef, and I've been cheffing since I was aged 13. I'm almost 22 and have worked in around 10 restaurants.

    I've learnt over my years some people find it rather difficult/annoying/expensive to cook quick and tasty meals in their house, and that usually refers to fast food.

    So today, I'll be posting up recipes, images and other helpful items.

    Lemon & Chive Risotto - BASIC

    Ingredients:

    - 200G arborio rice
    - 1 brown onion
    - 2 lemons
    - 1 bunch chives
    - 500ML chicken stock
    - 150Ml white wine - cheap stuff is best
    - Salt
    - 2 Garlic Cloves
    - Pepper (white)
    - 100G Parmesan cheese
    - Water
    - 50GM butter

    Method:

    - Dice brown onion, and garlic very fine.
    - Add diced brown onion, garlic to pot with vegetable oil / oil in general not olive it burns quick.
    - Cook that down, try not to get much color as it'll look like you've burnt it in the risotto, as it's very white.
    - Add your rice to the pot, cook out for another minute.
    - Add your white wine, chicken stock.
    - Cook down, you may need to add water / chicken stock, you want it thick, but not crunchy.
    - Finely slice chives, and zest your lemon, if you don't have a zester grab your grater, grate pieces and then finely finely chop.
    - Take off the stove, beat in your butter and cheese, lemon zest, chives.
    - Season.

    If you want it more cheesy, or buttery you know what to do.
    **** THIS SELLS GREAT AT THE RESTAURANT ****

    Helpful hint - you can make risotto batches at a time without butter and cheese / or herbs and freeze the rice down.

    Salt & Pepper Squid

    Ingredients:

    - 200G squid fillets from your local fishery, or shopping center.
    - 100G tempura flour
    - Sea salt is best
    - Kiwi Fruit - not sure if you can get in America, just use milk 100ml
    - Sweet Chili Sauce - bottled is fine, if you want a recipe for sweet chili can do so but it's a time consuming one.
    - 1L Vegetable oil / Cottonseed Oil

    Method:

    - Clean fillets if they are dirty give them a wash, usually are very clean.
    - Soak in kiwi fruit puree / or milk, milk works just the same, or lemon juice is okay but stronger.
    - Cut your squid thinly, you want little pieces, not diced, but whole pieces.
    - Pour oil into a large pot, put on your stove top. Slowly bring it up to a hot temperature, if you have a thermometer you want around 200 degrees.
    - Dry your squid off on paper towel / chux cloth.
    - Add to your tempura flour, and straight into your hot oil.
    - It will go crispy, take out and put back onto paper towel.
    - Serve with sea salt, fresh lemon, sweet chili sauce.

    I absolutely love it, nothing better than making a meal for the ones you love. Some countries are still in the Stone Age.

    Fortunately, my wife is a great cook, although some stuff she doesn't cook (such as spicy food), so I do. I have to keep it mild though as she's not used to it much (yet). :( :D

    Hell yeah i cook all the time sarahk, 2 main reasons, 1. I find it relaxing and 2. It enables my wife to relax in the evening after a long hard day at school.
