    I currently have my forum set to where Adsense appears after every other post. Do you thinks that's overdoing it a little bit?

    it's your forum and you can get more impression count, there is not called over do but people will less tend to click the ads if the page is full of adsense

    look at the placements by top forums. e.g. this one. They put it there for a reason. Copy and experiment it a bit.

    Less is better, and I think it also applies with adsense. More of it tends to clutter your site, and also tends to turn your readers off.
