    For me:

    1) Wensleydale (only with australian shiraz wine)
    2) Italian Parmigiano Reggiano even alone it's great but it ain't bad with some Tuscan Chianti!
    3) Mature Cheddar with pears

    Why am I thinking about food so early? I'm not even on diet!:confused:

    4) I forgot Sardinia Pecorino with honey!

    Melted mozzarella, colby jack not melted or melted like it both ways. Not a huge cheese eater by itself though, pizza, tacos, burgers, etc all go good with cheese.

    Forgot nachos, philly steak and cheese any many other yummy foods that go good with cheese, thanks alot now you made me hungry :(

    I mostly eat string cheese and pepper jack. I really like emmental, feta, and blue cheese, too.

    In high school I was on a thing called Dairy Judging (the same thing from Napoleon Dynamite). Basically you walked around eating a ton of different types of cheeses and you had to identify them, you drink a bunch of different milk and told what was wrong with it, and you had to tell the difference between butter and margarine and real and fake whip cream.

    Wow... If I had to pick... well I don't know that I can.

    Gouda, Provolone, Cheddar, Colby-Jack, Brie, Feta, Mozzarella, and more that I can't even think of.

    As far as how I eat it: Singles, Blocks, Wheels, String, Shredded, Grated, Melted... pretty much all of it.

    Greece Feta. Great for cold salads with fresh tomato, paprika, olive and a little bit of origano and olive oil (extra virgin).

    Very strong, salty white cheese. For drink take white vine. Some from Santorini. Beer too: Serbian "MB". So, it is sitewide cheese. ; )
